Your ingredients
- Round wheat dumpling wrappers
- 24–30, about 3½ inches / 9 cm
- Fresh mushrooms, finely chopped
- 200 g / about 7 oz
- Green cabbage, finely chopped
- 200 g / about 3 cups, loosely packed
- Carrot, finely grated
- 1 medium / about 75 g
- Scallions, finely sliced
- 2
- Fresh ginger, finely grated
- 2 tsp
- Soy sauce
- 1 tbsp
- Toasted sesame oil
- 1 tsp
- Fine salt
- ¼ tsp
- Neutral oil for vegetables
- 1 tbsp
Weights are the development reference; cup measures are approximate and depend on chopping. Yield is a pilot target. You may have extra filling: cook it separately and safely rather than overfilling wrappers.
Prepare the filling
Cook the mushrooms
Warm 1 tbsp neutral oil in a skillet over medium heat. Add mushrooms and stir until softened and their released liquid has evaporated.
Add the vegetables
Add cabbage, carrot, scallions and ginger. Cook until softened and there is no pooled liquid. Mix in soy sauce, sesame oil and salt.
Cool before folding
Spread in a shallow container and cool promptly; refrigerate until ready to fold. The filling should hold together on a spoon without dripping. Do not leave it cooling on the counter for hours.
Small, tender pieces with no loose liquid. Cool filling protects the wrapper during folding.
The filling is cooked first, but raw wheat wrappers still need thorough cooking. Do not eat raw dough.
Fill, seal and cook
Use the simple half-moon fold, then follow the fresh-pan pilot procedure. Keep the main filling bowl refrigerated and work with a small portion.
