Use the first three to find your portion
Start small. If your wrapper needs stretching to close, remove some filling. Keep the sealing edge free of filling, gently release trapped air, and press continuously along the rim.
The seam stays closed. The skin has no hole. The filling stays inside. Slightly different shapes are part of learning.
If the edge will not stick
Check for filling on the rim, a dried skin, or too much filling. Clear the edge, lightly wet it and try again. Replace a torn wrapper instead of forcing it to hold.
Keep the rest ready
Cover unused wrappers. Place formed dumplings apart on a lined tray, without stacking them. Keep the main filling cold and bring out small working portions.
