Your ingredients

Round wheat dumpling wrappers
24–30, about 3½ inches / 9 cm
Ground pork
250 g / about 9 oz, preferably 80% lean
Finely chopped green cabbage
150 g / about 2 cups, loosely packed
Scallions, finely sliced
2
Fresh ginger, finely grated
2 tsp
Soy sauce
1 tbsp
Toasted sesame oil
1 tsp
Fine salt
¼ tsp
Neutral oil for cabbage
1 tsp

Weights are the development reference; cup measures are approximate and depend on chopping. Yield is a pilot target. You may have extra filling: cook it separately and safely rather than overfilling wrappers.

Prepare the filling

  1. Soften the cabbage

    Warm 1 tsp neutral oil in a skillet over medium heat. Add the finely chopped cabbage and stir until softened and the pan has no pooled liquid.

  2. Cool and combine

    Transfer cabbage to a shallow bowl and cool promptly. Mix with the pork, scallions, ginger, soy sauce, sesame oil and salt until cohesive. Never taste raw filling.

  3. Keep it cold

    Refrigerate the main bowl. Take out a small working portion for folding; keep raw utensils separate from your sauce and finished food.

Check before folding

Fine cabbage pieces, an evenly mixed filling, and no puddle at the bottom of the bowl.

The center of the ground-pork filling must reach at least 160°F / 71°C. Color and a crispy base cannot establish safety.

Fill, seal and cook

Use the simple half-moon fold, then follow the fresh-pan pilot procedure. Keep the main filling bowl refrigerated and work with a small portion.
